Fresh Strawberry Mojito



Makes 1 cocktail

For the strawberry puree
1 cup quartered fresh strawberries
1 fresh mint leaf
1 tbsp sugar

For the cocktail
Juice from ½ lime (about ½ oz)
10 fresh mint leaves
1 oz white rum
1 oz simple syrup
1 oz strawberry puree
4 oz soda or sparkling water
Ice cubes

To make the strawberry puree: Put the strawberries in a blender, and add the mint leaf and sugar. Blend until very smooth. Strain the puree in a fine sieve to get rid of the seeds and bigger bits of mint. This makes more than you need for one cocktail, but you can store it in an airtight container in the refrigerator, where it’ll keep for a week.

To make the cocktail: In a tall glass, pour the lime juice and add the mint leaves. Using a muddler or a wooden spoon, crush the mint leaves to release their oils into the lime juice. Add the rum, simple syrup, 1 oz of strawberry puree, and mix with a spoon. Add 3-4 ice cubes, then add 4 oz soda or sparkling water. Mix well. Decorate the glass with a sprig of mint and a fresh strawberry, if desired.

Pink and Blue Margaritas

These margaritas will certainly liven up your weekend, both refreshing and delicious. They are super simple to make, the only catch being, you need fresh limes, it really makes a difference. Make these at your next party, they are sure to be a hit.


Pink Grapefruit Margaritas

  • 1 cup          ruby red grapefruit juice
  • 1/2  cup    fresh squeezed lime juice (about 4 limes)
  • 1 cup         triple sec orange liqueur
  • 3 cups      ice
  • 1 cup        silver tequila
  • 1   lime cut in wedges, optional Kosher salt.


If you prefer to rim the glasses take a lime wedge and rim, then dip in salt, if you do not like a salted rim sprinkle a touch of salt in each glass, the salt really brings out the flavor.
Combine the grapefruit juice, lime juice, triple sec and ice in a blender. Pour into a large pitcher (or just keep it in the blender) and pour in the tequila, stir. (I personally just added it all to the blender- I like slushy, that is totally up to you)
Makes 4 drinks.
* Just as a note: it is important to use Ruby Red grapefruit juice, it is much sweeter than regular and it has the lovely pink color.






Blue Margarita


The classic margarita is made with orange liqueur, most commonly triple sec.  Blue curacao is also an orange liqueur and thus, blue margaritas have long been around.  We find the flavor of the blue a little more bitter so we've balanced the drink by using half blue curacao and half triple sec.  Add in the requisite fresh lime juice, a bit of simple syrup and the unique flavor punch of sea salt and this drink is lip-smacking good.

Sassy Wonton Tacos Receipe


PER SERVING (1/4th of recipe, 2 wonton tacos): 96 calories, 1g fat, 302mg sodium, 12.5g carbs, 0.5g fiber, 3g sugars, 8.5g protein

Ingredients
 
  • 8 small square wonton wrappers (usually stocked with the tofu in the refrigerated section of the market)
  • 1 cup dry coleslaw mix
  • 2 tbsp. chopped fresh cilantro
  • 2 tbsp. Newman's Own Lite Low Fat Sesame Ginger Dressing (or another low-fat sesame ginger dressing)
  • 4 oz. cooked and shredded (or finely chopped) skinless lean chicken breast
  • 2 tbsp. BBQ sauce with about 45 calories per 2-tbsp. serving
Directions

Preheat oven to 400 degrees.

Spray the inside and outside walls of a deep square or rectangular baking pan with nonstick spray. Evenly drape the wonton wrappers over the pan's walls on a diagonal, making triangle-shaped "shells." (Use two pans, if needed, to keep wontons from overlapping.) Bake until just crispy enough to hold their shape, about 3 minutes.

Remove pan from the oven, but leave oven on. Carefully remove wontons and gently open to form "taco shells." Set aside.

In a microwave-safe bowl, combine coleslaw mix, cilantro, and dressing. Mix well. Cover and microwave for about 1 minute, until slightly softened. Set aside.

 

In another bowl, combine chicken with BBQ sauce; mix well and set aside.

Spray a baking sheet with nonstick spray. Evenly distribute the BBQ chicken among the shells, followed by the slaw, about 1 tbsp. of each per shell. Lay the filled shells gently on their sides on the baking sheet.

Spray the shells lightly with nonstick spray. Bake until warm and crunchy, about 5 minutes. Let cool slightly and then serve!

Watermelon Jello Shots on a Popsicle Stick


How cute are these mini watermelon slice jello shots? They worked out just as I had hoped. My only regret is that I didn't have pink jello, only red. I think pink would be cuter. Cute in a Lilly Pulitzer type of way. 

I swear I had pink jello in my stock pile, sigh ... Oh well the red is still adorbs.

So it's pretty simple actually. You just make your three different colored/flavored jellos and layer them in a loaf pan.

Green Layer
1 regular sized (small) box lime jello
2/3 cup water
2/3 cup tequila (the good stuff that doesn't make you choke when you drink it)

1. Boil your 2/3 cup water and then add your lime jello packet. When it has all dissolved add to you 2/3 cup tequila.

2. Pour about half of your green jello mixture into your loaf pan and refrigerate until it's solid, about 30-45 mins. (If you are worried about the left over, pour it in a dixie cup and serve it later, someone will want a plain old jello shot I promise)


I used tequila but you could use any alcohol you want!
